Honestly a soundtrack I never heard ANYBODY talk about despite it being one of the standout soundtracks of the 2000s to me - the Amon Tobin OST to Splinter Cell Chaos Theory.There's nothing like it, IMO - one of the best "spy soundtracks" of all time:

and i recently was fascinated with the plok ost. i knew about the boss song, 'cause that one, i think, is particularly notorious for being Too Much of a banger, but my personal favorite is the beach theme
i can't get over it. this does not sound like a beach theme. you're insane. this entire ost (which is like, i think, 6 songs) kicks ass FOR NO REASON!!! GIRL IT'S PLOK CALM DOWNNN also, if you listen to it, be sure not to quit too early. don't miss out on the guitar solo
(i actually do love a lot of osts that are more "real music" likeee there's this youtube video that compiled a lot of silent hill songs that, together, sound like an alt rock album LOL and i've been obsessed with the guilty gear strive ost because that is JUST METAL. LIKE IT'S JUST A METAL ALBUM! and the sonic r ost, of course.. who could forget her...!!
but in the spirit of the thread i'll just stick to the first two :3)

my personal addition to the thread: my faves are mostly from the GBA era. i love that funky little handheld and all of its 32 bits....
this pokemon mystery dungeon track makes me misty every single time. it transports me back to simpler moments, going on adventures with my friends. i can picture myself strolling through in the shining sun, buying TMs from the Kecleons, and making my way to train at the Makuhita dojo. rescue missions are dangerous, but life in the square is easy.
this zelda minish cap track, as well. the strings, the main melody, THE PAN FLUTE!!! uuuggghhh the atmosphere of this game was so unbeatable and its soundtrack is a HUGE reason as to why. an incredibly underrated soundtrack for an underrated as hell game.
